Set it 3 to 4 weeks before the wedding. This gives you time to follow up with non-responders and submit a final guest count to your caterer before their deadline. Include the date clearly on the invitation and add it to your wedding website.
Most caterers need a guaranteed count 1 to 2 weeks before the event. You can typically add guests after the guarantee but not reduce below it. Be conservative if you still have outstanding RSVPs, since you will pay for the guaranteed number either way.
Call or text directly. Most non-responses are people who forgot, not intentional declines. Set a firm internal deadline one week after the RSVP date and start following up. Keep your count conservative until you have heard from everyone.
Schedule your final fitting 2 to 4 weeks before the wedding. This allows time for any last adjustments. Do not eat dramatically differently in the weeks before this fitting. Pick up the dress no earlier than 1 to 2 weeks before the wedding.
